SEASON 1, EPISODE 3 – Vegan Stromboli

Season 1 is all about Italian food!

The “Italian Burrito” is an often overlooked pizza shop delicacy. Usually made with the same dough as Pizza and Calzone, we will make it a little different this time, and quicker! Knuckle Sandwich breaks it down so anyone can do it!

DOUGH RECIPE (Makes 1 Stromboli)
1 CUP (200g) warm Water
1 TSP (4g) Active Dry Yeast
2 CUPS (325g) AP Flour
1 TBSP (14g) Sugar
1 TSP (6g) Salt

1) mix Water & Yeast and set aside for 10 minutes
2) Combine all dry ingredients in the bowl of a stand mixer
3) Add Wet ingredients and mix with a dough hook (or knead by hand) for 10 minutes
4) Let rise in a covered, oiled bowl for 1 hour
5) On parchment paper, roll dough into a large, thin rectangle
6) Lay toppings on dough
7) Fold the dough lengthwise to cover the toppings. Seal the ends, then fold the remaining dough over the toppings toward you
8) Wash with Olive Oil and cut slits on top.
9) Bake at 400°f for 25 minutes (turning halfway)
10) Rest for 10 minutes

SAUCE RECIPE
28oz Canned Crushed Tomatoes (3 1/3 CUP)
30g Olive Oil (2.25 TBSP)
5g Salt (1 TSP)
10g Sugar (2 TBSP)
1 TSP Oregano
Large PINCH of Red Chili Flakes

Using medium heat, cook sauce until thicc (about 15 minutes)
