It’s party time in the strawberry patch! My kids and I braved the heat recently and picked 19 pounds of organic strawberries at our farm share. Another friend just told me she picked four gallons. Life is good now, with plenty of fresh berries for tarts, pies and shortcake.
Life will also be good all winter, when we’ll turn these berries into frozen strawberry smoothies that taste better (and are better for you) than anything in an ice cream parlor. We’ve been making smoothies for dessert all winter and just used up the last bag — a good thing considering most of the berries from this year’s harvest have already been frozen (unwashed) on trays and added to Ziploc bags for next winter. Freezer space is always at a premium!
Frozen Strawberry Smoothie
Rinse frozen berries and remove stems, if you haven’t already done so. Put in a food processor with plain organic yogurt and honey to taste, then pulse until smooth. Add more yogurt until you have the consistency you like. Serve immediately. Note: If you want to make it ahead and put it back in the freezer, you’ll end up with a frozen treat that resembles sorbet (only with dairy).
